Indian Ginger Cultivars: Cochin, Calicut & Northern Rhizomes
India is the world's leading producer and exporter of premium dry ginger (Zingiber officinale). Internationally renowned grades—such as Cochin and Calicut ginger—are famous for their distinct lemon-like top notes, golden color, and balanced pungency. Northern Indian varieties cultivated across Punjab and Himachal Pradesh produce stout, fibrous rhizomes with high essential oil density.
At Jugrajj Food & Herbs, freshly harvested rhizomes are washed, peeled, sun-cured over three days, and dehydrated under controlled airflow to prevent mold formation while locking in aromatic terpenes.
Gingerol vs Shogaol: Balancing Pungency & Thermal Stability
The culinary profile of ginger is governed by two primary phenolic groups:
- [6]-Gingerol: The dominant active compound in fresh ginger, conferring a crisp, sharp, refreshing aromatic heat. Highly favored in beverage infusions and marinades.
- [6]-Shogaol: Formed during controlled dehydration, shogaol is twice as pungent as gingerol and possesses remarkable thermal stability, making it ideal for baked goods, gingerbread, and confectionery that endure high baking temperatures.
Our dehydration process balances total gingerols and shogaols (≥ 5.5%), ensuring full-bodied warmth that does not evaporate during commercial food processing.
Beverage Applications: Ultra-Fine 100-Mesh Dispersion
In ready-to-drink (RTD) kombucha, ginger beer, herbal teas, and functional shot formulations, gritty sediment is unacceptable to consumers. We produce an ultra-fine 100-mesh micro-powder that disperses evenly throughout liquid bases, delivering instant aromatic flavor without requiring synthetic ginger flavorings or chemical emulsifiers.
Bakery & Confectionery Applications: Moisture & Fiber Control
In high-speed commercial bakeries, excessive fibrous threads in ginger powder can clog depositing nozzles and create inconsistent texture in biscuits, wafers, and snack coatings. Our multi-stage mechanical sifting purges coarse plant fibers, delivering smooth texture, moisture ≤ 6.5%, and total ash ≤ 5.0%.
